Delicious Chicken Avocado Melt Sandwich

This Chicken Avocado Melt Sandwich is the perfect quick and satisfying lunch or light dinner. Creamy avocado, tender chicken, and melted cheese come together on toasted bread for a delicious and easy meal.

Ingredients

  • 2 slices bread of your choice
  • 4 oz cooked chicken breast, shredded or sliced
  • 1/4 avocado, sliced
  • 1 slice cheese (cheddar, provolone, or your favorite)
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon lemon juice
  • Salt and pepper to taste
  • Optional: red pepper flakes

Instructions

  1. In a small bowl, mix the shredded chicken with mayonnaise and lemon juice. Season with salt, pepper, and red pepper flakes (if using).
  2. Spread the chicken mixture evenly on one slice of bread.
  3. Top with sliced avocado and cheese.
  4. Place the other slice of bread on top.
  5. Melt the sandwich using one of the following methods:
    • Skillet: Butter the outside of both slices of bread. Place the sandwich in a skillet over medium heat and cook for 3-4 minutes per side, or until golden brown and the cheese is melted.
    • Oven: Preheat oven to 350°F (175°C). Place the sandwich on a baking sheet and bake for 8-10 minutes, or until the cheese is melted and the bread is toasted.
  6. Remove from heat, slice in half, and serve immediately.

Notes

For extra flavor, add a sprinkle of your favorite seasoning blend to the chicken mixture. Serve with a side salad or chips for a complete meal.
