This Coconut Lime Fish with Garlic Butter is a quick and easy weeknight dinner bursting with tropical flavors. Flaky white fish is pan-seared to perfection and topped with a luscious coconut lime and garlic butter sauce.

  • 4 (6-ounce) white fish fillets (cod, tilapia, or snapper)
  • 2 tablespoons coconut oil
  • 1/4 cup coconut milk
  • 2 tablespoons lime juice, fresh
  • 2 tablespoons butter, unsalted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper to taste
  • Lime wedges, for serving

Instructions

  1. Pat the fish fillets dry with paper towels and season with salt and pepper.
  2. Heat coconut oil in a large skillet over medium-high heat.
  3. Add the fish fillets to the skillet and cook for 3-4 minutes per side, or until cooked through and flaky.
  4. While the fish is cooking, melt butter in a small saucepan over medium heat. Add garlic and cook for 1 minute, until fragrant.
  5. Stir in coconut milk and lime juice. Bring to a simmer and cook for 2-3 minutes, or until slightly thickened.
  6. Remove from heat and stir in cilantro.
  7. Pour the coconut lime garlic butter sauce over the cooked fish fillets.
  8. Serve immediately with lime wedges.
