  • 1/2 cup cranberry sauce (canned or homemade)
  • 1/4 cup orange juice
  • 2 tablespoons orange marmalade
  • 1 tablespoon soy sauce
  • 1 teaspoon orange zest
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, toss the chicken pieces with olive oil, salt, and pepper.
  2. Heat a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  3. In a small bowl, whisk together the cranberry sauce, orange juice, orange marmalade, soy sauce, orange zest, garlic powder, and ginger.
  4. Pour the sauce over the chicken in the skillet. Bring to a simmer and cook for 2-3 minutes, stirring occasionally.
  5. In a separate small bowl, whisk together the cornstarch and water to create a slurry.
  6. Pour the cornstarch slurry into the skillet with the chicken and sauce. Stir continuously until the sauce thickens, about 1-2 minutes.
  7. Remove from heat and garnish with fresh parsley.
  8. Serve hot with rice, quinoa, or your favorite side dishes.

Notes

For a spicier kick, add a pinch of red pepper flakes to the sauce. Serve over rice or quinoa for a complete meal.
