Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 8 ounces pasta (such as penne, fettuccine, or rotini)
  • 2 tablespoons butter
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, season chicken with Cajun seasoning.

  4. Melt butter in the same skillet. Add onion and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more.
  5. Pour in heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
  6. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  7. Add cooked pasta and chicken to the sauce. Toss to coat.
  8. Garnish with fresh parsley and serve immediately.

Notes

For an extra kick, add a pinch of red pepper flakes to the sauce. Serve with garlic bread or a side salad.
