This White Chicken Chili is a creamy, flavorful, and comforting dish, perfect for a cozy night in. Made with tender chicken, white beans, and a blend of spices, it’s a hearty and satisfying meal that’s easy to make.

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 2 (15-ounce) cans Great Northern beans, rinsed and drained
  • 1 (4-ounce) can diced green chiles, undrained
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, avocado, cilantro, lime wedges

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and green bell pepper and cook for another 2 minutes.
  2. Stir in shredded chicken, Great Northern beans, diced green chiles, chicken broth, cumin, oregano, and cayenne pepper (if using). Bring to a boil, then reduce heat and simmer for 15-20 minutes, allowing flavors to meld.
  3. Remove from heat and stir in sour cream. Season with salt and pepper to taste.
  4. Serve hot, garnished with your favorite toppings such as shredded cheese, avocado, cilantro, and lime wedges.

Notes

For a thicker chili, mash some of the beans with a fork before adding them to the pot. You can also use a hand blender to partially blend the chili. Serve with tortilla chips or cornbread for dipping.
