These White Chocolate Strawberry Truffles are a decadent and delightful treat, perfect for special occasions or a sweet indulgence. Made with creamy white chocolate and freeze-dried strawberries, they’re melt-in-your-mouth delicious.

  • 8 ounces white chocolate, finely chopped
  • 1/2 cup heavy cream
  • 1/4 cup freeze-dried strawberries, finely ground
  • 2 tablespoons unsalted butter, softened
  • Pinch of salt
  • Optional: Extra freeze-dried strawberries or white chocolate for coating

Instructions

  1. Place the chopped white chocolate in a heat-safe bowl.
  2. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
  3. Pour the hot cream over the white chocolate and let it sit for 1 minute to soften the chocolate.
  4. Add the ground freeze-dried strawberries, softened butter, and salt to the bowl. Stir until the chocolate is completely melted and smooth.
  5. Cover the bowl with plastic wrap, pressing it directly onto the surface of the truffle mixture. Refrigerate for at least 2 hours, or until firm enough to roll.
  6. Once firm, use a spoon or small cookie scoop to portion out the truffle mixture. Roll each portion into a ball.
  7. Optional: Roll the truffles in extra ground freeze-dried strawberries or dip them in melted white chocolate.
  8. Place the finished truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set completely.
  9. Serve chilled and enjoy!

Notes

For an extra touch, drizzle melted white chocolate over the finished truffles or sprinkle with chopped pistachios. Store in an airtight container in the refrigerator for up to a week.
